Why does less thickness mean more aroma?
In haute chocolaterie, geometry is flavor. A chocolate that is too thick forces the palate into strenuous chewing, delaying the encounter between taste buds and flavor notes.
Nacrè's thin Modica chocolate, on the other hand, is designed for rapid melting.

Heat shock: Due to the reduced thickness, the heat of the mouth immediately melts the cocoa matrix.
